Don't know if you got your tank yet. I have the under-fender one made by Front Runner and really like it. The tap which is part of it makes it hugely useful for washing up, washing hands, taking a (sort of) bath, etc. We don't use it for drinking but for the things I've just mentioned. It's filled from inside: I use an inverted plastic bottle with the bottom cut off and a length of hose on the top, tying the bottle to the rear ladder in order to leave both hands free. However, the tank's capacity means that for more than one night out, other water supplies must be carried. In our case this is plastic jerry cans inside the vehicle. We carry eight of 5 litres each, for ease of handling, and two of 10 litres. This gives 100 litres in all (plus the drinking water).
