This is probably a really stupid question, but can I use a crossover cable to connect two pc's that have GB NICs without using a switch?

Should be ok but you will have to setup IP manually (no DHCP) also you prpobably dont need an xover cable most modern ethernet cards auto sense.

I would just try it with a normal cable.
