Ingredients
4 large fresh green chillies.
2 tble sp butter
1 onion , chopped,
3 garlic cloves , squashed or finley chopped,
1/4 tble sp ground cumin,
225ml of single cream,
225 ml of chicken or veg stock,
salt +pepper.
1/
char the chillies in a hot pan/grill in order to make the skin peel off easily , this is made even easier by placing the hot charred chillies in a plastic bag
and sealing them in for 20 mins. you can skip this step and just chop them into strips and deseed them leaving the skins on.

melt the butter in a large pan or wok , add the onions and garlic and saute for around 3 mins. then add the cumin and a little salt and pepper.

stir in the chillies , cream and stock. cook on a medium heat until the liquid reduces into a thick creamy sauce (20 mins or so should do it depending on your cooker/pot etc but you will know when its ready;) ).
this is a great side dish to any mexican food and tastes fantastic, also great for bbq's.
