Have been promised a couple of fresh dressed Partridges and was wondering if anyone had any ideas / receipes for cooking them?

Use Breast..thats all you will probally have anyway...wee creatures..
Heat up some Oil in a pan to red hot and sear the joints to retain the Moisture and taste then gently fry in a Good red or white wine..
Use the red wine and stock from the Fy off and reduce it down by keeping on a low heat and whalla your own sauce..

Furthermore...
add to the above a tablespoon of whole grain mustard, and a tablespoon of sweet rowan jelly(or anything sweet really) and then you really have a fantastic sauce!
