Does a Discovery's tow bar foul up the departure angle?
If so, are there adjustable towbars that overcome the problem?
Which tow bars do you Discovery owners recommend?
What is the cost of a good (your recommended) towbar?

Anything that hangs down behind the whhels reduces the departure angle. If it is an early enough Disco, you may be able to fit a non CE marked towbar. This could be a receiver type hitch that has little affect on the angle.

You can also use the detachable hitches. Safety devices do a rather nice tavk guard which you can add a hitch to, it is however a little pricey.
Whilst it is true that any standard hitch will affect departure angle, they do in general provide some protection to the rear and an early non too expensive warning of problems.
As an afterthought the Camel vehicles used to have some kind of tow/recovery loop direct to the bumper I think. Depending what you want to do then this might be an option.

Have a look at Disco Parts (www.discoparts.com). Mark does a replacement bumper which has recovery points on, and a "receiver" style hitch.
I've got a "swan neck" towbar on my series 2 Disco - apparently these are better than the adjustable ones, as you don't loose quite so much departure angle.
